Tropical Bean Salsa
Serves 4
1 Point per serving and Core
1 red onion, diced
1 mango, peeled, pitted and diced
1/2 red bell pepper, seeded and diced
1/2 cup fresh or thawed frozen corn kernels
1/2 cup canned black beans, rinsed and drained
2 Tbsp fresh lime juice
1/4 tsp salt
1/8 tsp freshly ground pepper
2 Tbsp chopped fresh cilantro or parsley
In a medium bowl, combine the onion, mango, bell pepper, corn, beans, lime juice, salt, and pepper. Let stand 5 minutes to allow the flavors to blend. Stir in the cilantro.
