Recipe of the Week

Speedy Hoppin' John Salad
Serves 4
3 Points and Core

15oz can black-eyed peas, rinsed and drained
1 red bell pepper, seeded and chopped
1 green bell pepper, seeded and chopped
2 celery stalks, chopped
1 small red onion, chopped
2 Tbsp apple-cider vinegar
2 tsp olive oil
1/4 tsp dried thyme
1/4 tsp salt
1/4 tsp freshly ground pepper

Combine all ingredients in a large bowl. Serve at once or refrigerate, covered, with plastic wrap overnight.
